Green and Frugal Living Recipes

Cooking your own meals is one of the best ways to save money and eat healthy. Here are some frugal recipes (salad, main course and dessert) to help you get started:

Mom's Cucumber Salad

2 cucumbers (peel and slice)
1/4 cup italian dressing
1-2 tbsp mayonnaise

Stir all together  to ensure a nice coating.

I love this recipe and no matter how hard I try, it never tastes quite the way Mom makes it. :)

Charlie's Cheap Chili

1 lb. extra lean chopped beef
1 can peeled tomatoes
1 can tomato sauce
1 lg. yellow onions, chopped
1/2 sm. green pepper, chopped
1 1/2 tbsp. chili powder
1 tsp. cumin

Brown the beef and onions in a 12 inch skillet and drain before adding all other ingredients. Simmer for 1-2 hours. Serves 2 with healthy appetites!

Cheap & Easy One-Step Brownies

1 tsp. Crisco
1 chocolate cake mix (with pudding in the mix) any brand
4 eggs
1/2 c. oil
3 tbsp. water, warm

Grease a 9 x 13 inch cake pan (bottom only) with Crisco. Dump cake mix directly into pan. Make a well, put in 4 eggs, beat with fork into dry mix, add oil and water and stir with a fork until most of the mixture is well mixed.

No lumps remain. If nuts or chocolate chips are preferred sprinkle in now and stir. Bake at 325 degrees for 20 to 30 minutes until top is shiny. Cool completely in pan then ice and cut and remove.
